Mercy Medical Center Dubuque Operations Manager/Executive Chef in Dubuque, Iowa
- Under the general direction of the Director, Food & Nutrition Services, responsible for the oversight and day-to-day culinary operations of the Food & Nutrition Services (FANS) Department in acute, sub-acute, long-term care, retail and catering settings. Responsible for the supervision of culinary personnel, procurement of food/supplies, quality control/improvement within the department and helps develop and maintain a culinary integrity program in a dual campus environment. Train and develop existing kitchen staff and develop and cultivate new talent to drive excellence through staff training and engagement. Lead by demonstration through proper cooking techniques and will possess a working knowledge of regulatory and food safety/sanitation practices and principles based on HAACP, Health Department, The Joint Commission and internal standards. Responsible for fiscal food and labor budget. Ensures cost reduction targets and productivity improvement objectives are met, while cultivating service/product quality and customer satisfaction. Identifies and facilitates opportunities for improvement in the areas of quality care and services, stewardship, employee satisfaction, communication, accountability and customer satisfaction. Function as the liaison between the kitchen staff and clinical dietitians to ensure optimal patient care as well as co-develop and promote wellness, educational and community initiatives, weight management and healthy cooking initiatives for optimal patient care and customer satisfaction.
Requires a Culinary Degree from an accredited Culinary School or a related Associates Degree.Requires High School diploma.Current ServSafe or other food safety or HACCP certification upon 90 days of hire. Requires a valid driver's license and proof of insurance.
In lieu of degree or certificate, at least 5 years of progressive work experience where culinary skills were demonstrated in a large quantity production within a commercial, healthcare or educational food service operation.Prefer years of experience in quantity food preparation with formal education. Strong culinary, customer service, management, organizational, quality assurance and budgetary experience.
